I tried a mining cutter build myself.
Problem is the mining lasers range suck and the cutters medium hardpoints are ways off towards back.

So I found I had to be practically swapping paint with a rock to be able to mine it or the lasers would be out of range.
This made limpets go screwy and crash even more frequently, and the whole process got annoying real fast...

To bad cause the cutter looked to be almost the perfect mining boat.
And the problem isn't really with the ship (although it handles like a whale) but with the mining lasers having to short a reach.
