2.1 Beta Deadzone
I couldn't find a way to adjust my joystick/throttle deadzones in beta 6. I looked around a bit, but no dice. I had to go into the regular game to adjust my deadzones. Am I missing something? This may be a bug if they don't add them before release.
It's time to give this another go.

D'oh! No, I was missing something. You need to use your mouse to expand the options. I was trying with the joystick. 
Damn, I created a bug report for this. Well, I guess not being able to use the joystick hat switches is kind of a bug.

Well at least I can use the joysticks for the in game menus and especially outfitting.
