You'd probably end up using it 70% of the time, I started playing ED with a DK2 (still counting) and it does trick you into believing that you're actually inside your ship. It's not too convenient trying to take a peek out of the VR headset every now and then whenever I need to check the browser though. Take note that I haven't tried any VR desktop plugin, by the way.
And sooner or later, you would have to use a HUD color editor (mostly green); the text will be much more readable afterwards. From what I've read before, Oculus Rift uses a PenTile screen and doesn't display red or blue that well.

All in all, it made me feel like I'm inside a scifi VHS or betamax tape. A charm I found surprisingly nostalgic. Oh, and don't worry about "losing touch", it's just there as long as you're wearing the headset. Just be careful not to push it too far if you end up getting simulator sickness on your first few tries.
