Thank you guys and I will take your advice.

I feel better today because I popped on for a cheeky half an hour earlier, took out a wanted transport then picked up his cargo and sold that on the black market.

On a more serious note, I just spotted this thread on the official forums and it presented me an interdiction evasion technique I'd not considered before.

Sometimes it is easier to spot a pirate than at others, but if you do get someone on your tail you think may be about to interdict you it probably is worth going to zero throttle and dropping out of SC asap. You might take a little damage, but you'll avoid the potential interdiction.

I think you can also do it when you're being interdicted (I never tried, but I read it on the official forum). It can also happen if you're dropped from SC because you're too close to something, and that happened to me once or twice. And since this is also an emergency drop, it makes me think that triggering the emergency drop by yourself should work as well.
